Increasing plantations of macadamia nuts in the DR is a strategy to preserve Dominican forests, absorb CO2, create well-paid farm jobs to reduce migration to cities, and contribute to the development of the rural areas where the nut is farmed. Jose Moreno Portalatin, owner of Cane Restaurant in Santo Domingo, made these comments at the launch of the Macadamia Festival at Cane. Cane Restaurant offers new Caribbean and Latin American cuisine.

The La Loma Macadamia Festival kicks off on 16 March at the Restaurant, but dishes are already available upon request. The restaurant will be serving 16 dishes made with macadamia nuts. These include tuna tartar, mixed green salad, lamb rack, risotto, shrimp tempura, baked sea bass, linguini pesto, macadamia cheesecake, banana tempura and candied chocolate apple.
