The Ministry of Public Health defended manufacturers and announced yesterday he had ordered a series of new studies to verify the quality of the salami manufactured here. Minister Bautista Rojas Gomez said that he ordered the new studies because the reports ordered by ProConsumidor, the consumer production agency, date back to January and "they do not allow for the determination of the exact quality of the product."

"What we are dealing with here is that the study be done with the scientific rigor that a study of this kind deserves, and which will cover the entire route, including the raw materials and the processing of the product," said the minister in a press release.

Rojas Gomez said that for the new analysis he asked for the help of the Pan American Health Office, and the Central American and Panama Nutritional Institute (Incap).

The minister said that, moreover, that all of the food processors, undergo inspections that range from notices for certain improvements to closing the food manufacturer.

The president of the Cibao Pork Producers Association (Aporci), Jose Alba, predicted yesterday that the information that was released about the manufacture of salami here would paralyze sales and that the sector will "regret this for a long time."

He questioned the way in which the issue was handled by ProConsumidor, since in his judgment, they should have closed the companies that were not complying with the quality control regulations, but they should not have included all of them.

Alba recognized that the use of parts and offal from poultry, or MDM (mechanically deboned meat according to the FAO) in the preparation of salami came into use over 15 years ago as extenders. But he justified their use in those products that are manufactured to be sold at the lowest prices.
