Best to change your dollars into pesos. The locals are not good at math and don't keep up with the daily exchange rates. If you pay in dollars they will always round up, sometimes a lot, to make sure they are not losing out. They are unlikely to charge you US$68.75 for anything, it will be US$100. Maybe Passions and other places aimed exclusively at the gringo market are exceptions, but there is no downside to changing into pesos, so do it.
